Lentil Stew with Italian Sausage

A simple dish that is warming and energizing. This recipe calls for dried lentils, which are easy to store and keep for a long time. Gluten and grain free of course. Enjoy!

Ingredients: (for 2 people with leftovers)

1/2 large onion

3/4 cup dried lentils - color of your choice

1 Tablespoon fat - I usually use bacon fat

2 large carrots

2 - 3 celery stalks

4 cups beef broth

2 Italian sausage - or of your choice

Salt, pepper

Dice the onions and sauté with lentils in bacon fat until the onions are soft. Add the beef broth and bring to a good simmer. In the meantime, dice the carrots and celery, then add. Cover and let simmer until the lentils are soft. Reduce heat and add sausages until hot. Be sure not to let the soup boil with the sausages since they will burst. Add salt and pepper to taste. Enjoy!

 

Carrot & Cauliflower Cream Soup

This is one satisfying soup! Made with a few simple ingredients, this soup is done in no time. Packed with vitamin A and, as always, gluten and grain free!

Ingredients:

1/2 large onion

1/2 head of cauliflower

6 medium sized carrots

4 cups beef broth

1/2 cup heavy cream

1 Tablespoon bacon fat or butter

1 Tablespoon salt

Dice and sauté the onions in bacon fat until the onions are soft. Add the beef broth and bring to a good simmer. In the meantime, dice the carrots and cauliflower, then add to the soup. Reduce heat and simmer until carrots are soft. Remove from the heat and puree with immersion blender. Add heavy cream and stir. Do not add the cream at any earlier point since this increases the risk of it separating. Enjoy the soup with bread of your choice!
