What is breakfast without coffee? Right? But when you are camping somewhere, how are you going to make the best coffee to get the day going? We show you how we make great coffee while on the road - or boondocking. Enjoy!

 

Scrambled Eggs with Avocado & Salmon

A breakfast packed with healthy proteins and beneficial fats to start your day with a bang! Very quick and easy to prepare, a great breakfast to prepare while camping.

Ingredients:

4 medium sized eggs

Butter

Olive oil

2 avocados

1 pack of wild caught smoked salmon

Salt, pepper

Almond bread

After removing the pit, slice the ripe avocados in 8 slices each. Plate with salmon, drizzle with little olive oil.

Crack eggs into small bowl, whisk lightly. Heat tablespoon of butter in pan, reduce heat to medium, add eggs and stir until desired consistency is reached.

Serve with salt, pepper, and almond bread. Enjoy!

Almond Bread

Almond bread is low in carbohydrates, high in fiber, and filled with nutrients. It is gluten and grain free, as well as sugar free.

Ingredients:

250 g Unblanched almond flour

2 medium sized eggs

2 Tablespoons olive oil

75 ml water

1 Tablespoon baking powder

1 Teaspoon salt

Mix all ingredients together with a fork. Make a flat loaf on a cookie sheet. Bake at 365° for 35 minutes.

You can add just about anything to this recipe. Try adding your favorite spices, nuts, seeds - whatever you fancy. Some of my favorites are sunflower seeds, pumpkin seeds, sun-dried tomatoes, and caraway seeds to name a few.
